You will need:
· 4 large bananas
· 2 eggs
· 2 tablespoons lemon juice
· 2 tablespoons caster sugar· 2 tablespoons apricot or strawberry jam
· 1 cup (100g-3.5oz) dried coconut
· Ice cream to serve
· Mixing bowl
· Ovenproof dish
· Cutting board and knife
· Egg whisker
· Spoon
Directions:
· Preheat the oven to 180 Celsius (350 Fahrenheit -Gas mark 4).
· Peel and slice the bananas.
· Arrange sliced bananas in ovenproof dish.
· Sprinkle sliced bananas with lemon juice.
· Break the eggs into the mixing bowl, add the sugar and beat until creamy.
· Add the jam and dried coconut, and mix well.
· Pour mixture evenly over bananas.
· Bake in the top half of the oven for 20-30 minutes or until golden.
· Serve warm with vanilla or banana ice cream.
