Amardeen Pudding

You will need:

·        2-3 Amardeen sheets (dried compressed apricot)

·        3½ cups water

·        ½ cup sugar

·        1 teaspoons grated orange peel

·        1 teaspoons grated lemon peel

·        ¼ cup blanched almonds

·        Nonstick saucepan

·        Wooden spoon

·        Small serving bowls

 

Directions:

·        With your hands, cut up the Amardeen sheets.

·        Pour water into the nonstick saucepan, and add the Amardeen.

·        Cover and set aside to soak for a few hours or overnight.

·        Add the sugar, grated orange and lemon peel.

·        Put the saucepan on the stove and turn the heat on medium.

·        Bring to the boil, stirring constantly.

·        Lower heat, and leave mixture to simmer until thick and soft.

·        Stir in the almonds.

·        Pour into the small serving bowls, set aside to cool.

 

Note: Decorate with chopped pistachios, blanched almonds or whipped cream.
