You will need:
1 stick margarine (using margarine instead of butter makes softer cookies)
2 eggs1 cup brown sugar
1 tsp. vanilla
1/2 cup cocoa powder
2 cups all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
Half-gallon vanilla ice cream
Directions:
· Mix the margarine and brown sugar until creamy.
· Beat in the eggs, one at a time.
· Add the vanilla.
· In another bowl stir the flour, cocoa, baking powder and salt.
· Gradually add this mixture to the margarine mixture.
· Beat the mixtures well until it forms a well combined dough.
· Gather the dough into a ball and chill for a minimum of 1 hour.
· Heat your oven to 375 degrees.
· Roll out the dough to half a centimeter thickness.
· Use a knife and cut out rectangular pieces. You decide how big or small depending on your favorite sandwich size.
· Place your cookie rectangles on a baking pan (no need to grease it). You may use a fork to make patterns in the cookies.
· Bake your cookies for 8-10 minutes. Leave aside to cool.
· While you are waiting for the cookies to cool, cut rectangular blocks from your vanilla ice cream.
· Place one ice cream block between two cookies. You may trim any excess ice cream from the sides.
