You will need:
· 3 large eggs
· 1½ cups (150g-5.3oz) sugar
· 2 cups (200-7oz) flour· 1 cup vegetable oil
· 2 teaspoons baking powder
· 1 teaspoon vanilla
· ½ teaspoon salt
· 1½ teaspoons ground cinnamon
· ¼ teaspoon ground nutmeg
· 1 cup coarsely chopped nuts
· A large mixing bowl
· Cake tin
· Electric mixer
· Wooden spoon
Directions:
· Preheat the oven to 180 Celsius (350 Fahrenheit-Gas mark 4).
· Grease and flour the cake tin.
· Break the eggs into the mixing bowl, and beat well with the electric mixer.
· Add the sugar and oil, beat well.
· Add everything else except for the carrots and chopped nuts, beat well.
· Now stir in the carrots, and nuts.
· Pour the cake mixture into the prepared cake tin.
· Bake in the top half of the oven for 35 minutes or until done.
