Rajesh Devadas Corporate Chef at Ramada Hotels Abu Dhabi speaks fat free cooking techniques

Speaking to Rajesh Devadas, Corporate Chef at Ramada Hotel Abu Dhabi, cooking seemed to an art mixed with special techniques, and fat free cooking is what he tends to do best!
“Fat and sodium does not affect the flavour much, technology has gone up so high, that there are equipment which really help in fat free cooking,” Devadas said. “For example the combi-oven can cook anything without fat. Especially when the traditional people cook rice in a pot the amount of oil used is very high. You can cook rice in the combi-oven without adding a drop of fat.”
“We today enjoy a modern world that looks upon body physique and healthy diets, and so do we at the Ramada Hotels, therefore, avoiding a mixture of fat or oil upon cookeries comes with highest priority, the secret lays in research and understand other much healthier tools and nutrients,” he added.
Upon choosing ingredients, we source out suppliers and then sample out each product. The sample is tested for quality and price and then ordered. When receiving the order each item is tested in order to ensure the right quality and perfect taste.
Attending a Culinary school, Devadas graduated from India in Bachelor of Hotel Management (BHM) and did Masters in Business Administration (MBA).
“Cooking has been my passion since childhood. I started cooking with my mother since I was 12 years old and that passion developed as a profession,” he said.
Holding the position of corporate chef of all the Whyndam properties in Abu Dhabi, Devadas runs a great team of 77 employees that report to him in four different hotels, which include, Ramada Abu Dhabi Corniche, Ramada Downtown, Howard Johnson and Tryp by Whyndam.
Asked about the favourite cuisine, Devadas chose to be biased, “If I point out any cuisine. You name it and I cook. This is my tagline. But more over I love Rustic European cooking.”
Speaking of menu development and overall design “I’m completely involved in menu development and menu engineering. I develop the menu, do the costing and then design the menu,” he said. - Ends -
