Johnny Di Francesco is a world renowned chef and the founder of Melbourne's award winning pizzeria 400 Gradi.

Affectionately dubbed 'Mr Pizza', the Italian restaurateur recently announced plans to break the world record for the most types of cheese on a pizza.

In honour of tomorrow's National Cheese Pizza Day, the acclaimed gourmet will serve up a staggering 150 cheeses on a history making pizza base.

The pizza will be available for $25 from September 5 to September 9 at all branches of the Gradi Group.

The restaurant is no stranger to success, having previously captured public imagination by creating Australia's famous Teenage Mutant Ninja Turtle 99-cheese pizza in 2014.

Since then, pizza aficionados around the world have battled for the title of 'most cheese used', with the current record held by a 111-variety pizza.

Speaking to the Herald Sun, Mr Di Francesco said the dish is sure to be a hit with Italian cuisine lovers.

'Getting 150 cheeses was a challenge but we did it – if I could have found more I would have definitely worked out a way to add more!,' he said.

The mammoth offering will include everything from Gorgonzola and goats cheddar to ricotta salata and buffalo blue.

There will also be ricotta, goat cheddar, Cornish kern, bocconcini, iberico, stilton, triple brie and much more.

And it's not the first time Mr Di Francesco has made headlines for his culinary delights.

Earlier this year, 400 Gradi was named 'Best pizzeria in Oceania' at the 50 Top Pizza Awards in Naples, the birthplace of the beloved dish in southern Italy.

Speaking to the Herald Sun in July, the owner and director of the Gradi group said it was a huge honour to be recognised among such prestigious competitors.

'It's known as the Oscars of pizzerias, so when I found out, I said, 'I have to get the suit out and accept this award!'.'

The overall title of World's Best Pizza went to chef Franco Pepe's Pepe in Grani eatery in Caiazzo, Italy.

Situated on the Italian food mecca of Lygon Street in Melbourne's inner north, 400 Gradi serves up 'heavenly Italian fare' with Napolese cuisine at the heart of every dish.

Australia's best pizzeria boasts a wide range of choices, including the traditional favourite Capricciosa made with San Marzano tomatoes, artichokes, olives, prosciutto and mushrooms ($25) and the quirky Viennese with white sauce and sausage topped with fried chips ($24).

The restaurant's signature pizza is the self titled Gradi, created with 20-month cured prosciutto di parma, cherry tomatoes, rocket and shaved parmesan for $26.

The most expensive item on the pizza menu is the globally appreciated Calzone al Forno, a folded pizza with mild salami, ricotta cheese, prosciutto cotto and basil priced at $29.
